A delightful homemade jam combining fresh raspberries and tart rhubarb, perfect for spreading and pairing with desserts.


Ingredients

  • 2 cups fresh raspberries
  • 2 cups chopped organic rhubarb
  • 2 cups sugar
  • 1/4 cup lemon juice
  • 1 pectin packet (optional)

Instructions

  1. In a large pot, combine fresh raspberries, rhubarb, sugar, and lemon juice. Stir well to combine.
  2. Heat the mixture over medium heat until it starts to boil.
  3. Cook for about 10-15 minutes, stirring frequently until the rhubarb breaks down and the mixture thickens (add pectin if using).
  4. Remove from heat and let cool slightly.
  5. Pour into sterilized jars and seal tightly. Allow to cool completely before storing in the refrigerator.
