Description

4 large Russet or Yukon Gold potatoes (peeled & chopped)

6 slices thick-cut bacon

3 tablespoons honey

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon onion powder

2 tablespoons fresh parsley, chopped


Instructions

1. Preheat oven to 400°F (200°C). Peel and chop potatoes into bite-sized pieces.

2. Soak potatoes in ice-cold water for 10 minutes, drain, and pat dry thoroughly.

3. Cut bacon into 1-inch pieces and cook in a skillet until slightly crispy. Remove and set aside, reserving bacon fat.

4. In a mixing bowl, toss dried potatoes with olive oil, 1 tablespoon bacon fat, garlic, salt, pepper, and onion powder.

5. Spread potatoes on a lined baking sheet in a single layer. Bake for 20 minutes.

6. Remove from oven, toss potatoes, sprinkle bacon pieces on top, and drizzle with honey.

7. Return to oven and bake for another 15-20 minutes until golden and crispy. Broil for 2-3 minutes for extra crispiness if desired.

8. Garnish with fresh parsley and additional black pepper. Serve hot and enjoy!

Notes

For extra crispiness, soak and dry the potatoes thoroughly before roasting.

Use smoked paprika or chipotle powder for added depth of flavor.
