- 2 tbsp honey

Instructions
- Wash and slice the baby carrots into uniform pieces to ensure even cooking.
- Steam the sliced carrots in a steamer basket over boiling water for 5-7 minutes until tender but still firm. Alternatively, sauté them in 1 tablespoon of olive oil over medium heat for 5-7 minutes until slightly caramelized and tender.
- In a small bowl, whisk together tahini sauce (2 tbsp), lemon juice (1 tbsp), honey (2 tbsp), olive oil (2 tbsp), and salt and pepper to taste until smooth and creamy.
- In a large mixing bowl, place the cooked lentils and steamed or sautéed carrots.
- Pour the prepared tahini dressing over the ingredients and toss gently to ensure everything is evenly coated.
- Transfer the salad to a serving bowl or platter.
- Garnish with freshly chopped parsley for a pop of color and added freshness.
- Serve immediately or refrigerate for later use.
