- 1 ½ teaspoon s baking powder (6 g)
- ¼ teaspoon salt (1.5 g)
- 1 cup peeled and chopped peaches (150 g)
- ¼ cup honey (60 ml)
- ½ cup powdered sugar (60 g)
- 2 tablespoon s heavy cream (30 ml)
Instructions
- Preheat your oven to 350°F (175°C).
- Line a cupcake pan with paper liners.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Mix in the vanilla extract until combined.
- In another bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the whole milk, beginning and ending with the dry ingredients. Mix until just combined.
- Gently fold in the chopped peaches.
- Divide the batter evenly among the prepared cupcake liners.
- Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- In a small saucepan, combine the honey and heavy cream over low heat. Stir until smooth and combined.
- Remove from heat and whisk in the powdered sugar until the drizzle is smooth and thick.
- Once the cupcakes are completely cooled, drizzle the honey mixture over the tops.
- Let the drizzle set for a few minutes before serving.
