  • ¼ teaspoon salt (1.5 g)
  • 1 cup peeled and chopped peaches (150 g)
  • ¼ cup honey (60 ml)
  • ½ cup powdered sugar (60 g)
  • 2 tablespoon s heavy cream (30 ml)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a cupcake pan with paper liners.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Mix in the vanilla extract until combined.
  6. In another bowl, whisk together the all-purpose flour, baking powder, and salt.
  7. Gradually add the dry ingredients to the wet mixture, alternating with the whole milk, beginning and ending with the dry ingredients. Mix until just combined.
  8. Gently fold in the chopped peaches.
  9. Divide the batter evenly among the prepared cupcake liners.
  10. Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  11. Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  12. In a small saucepan, combine the honey and heavy cream over low heat. Stir until smooth and combined.
  13. Remove from heat and whisk in the powdered sugar until the drizzle is smooth and thick.
  14. Once the cupcakes are completely cooled, drizzle the honey mixture over the tops.
  15. Let the drizzle set for a few minutes before serving.
