  • 4 ripe peaches, pitted and sliced
  • 1 tablespoon (15 ml) honey
  • 1 sheet puff pastry, thawed
  • 1 teaspoon (5 ml) vanilla extract
  • 1/4 teaspoon (1 g) ground cinnamon
  • 1/4 teaspoon (1 g) salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a saucepan, combine 1 cup sugar and 1/2 cup water.
  3. Cook over medium heat, stirring until sugar dissolves.
  4. Increase heat and bring to a boil without stirring.
  5. Boil until the mixture turns a golden caramel color.
  6. Remove from heat and stir in 3 tablespoons butter.
  7. Pour the caramel into a 9-inch tart pan, spreading evenly.
  8. Arrange peach slices over the caramel in a circular pattern.
  9. Drizzle 1 tablespoon honey over the peaches.
  10. Sprinkle with 1 teaspoon vanilla extract, 1/4 teaspoon cinnamon, and 1/4 teaspoon salt.
  11. Lay the thawed puff pastry over the peaches.
  12. Tuck the edges of the pastry into the sides of the pan.
  13. Prick the pastry with a fork to allow steam to escape.
  14. Bake in the preheated oven for 25-30 minutes, until golden brown.
  15. Remove from oven and let cool for 10 minutes.
