- 4 ripe peaches, pitted and sliced
- 1 tablespoon (15 ml) honey
- 1 sheet puff pastry, thawed
- 1 teaspoon (5 ml) vanilla extract
- 1/4 teaspoon (1 g) ground cinnamon
- 1/4 teaspoon (1 g) salt
Instructions
- Preheat your oven to 375°F (190°C).
- In a saucepan, combine 1 cup sugar and 1/2 cup water.
- Cook over medium heat, stirring until sugar dissolves.
- Increase heat and bring to a boil without stirring.
- Boil until the mixture turns a golden caramel color.
- Remove from heat and stir in 3 tablespoons butter.
- Pour the caramel into a 9-inch tart pan, spreading evenly.
- Arrange peach slices over the caramel in a circular pattern.
- Drizzle 1 tablespoon honey over the peaches.
- Sprinkle with 1 teaspoon vanilla extract, 1/4 teaspoon cinnamon, and 1/4 teaspoon salt.
- Lay the thawed puff pastry over the peaches.
- Tuck the edges of the pastry into the sides of the pan.
- Prick the pastry with a fork to allow steam to escape.
- Bake in the preheated oven for 25-30 minutes, until golden brown.
- Remove from oven and let cool for 10 minutes.
- Invert the tart onto a serving plate.
- Serve warm or at room temperature.
