- 1/2 teaspoon (3 ml) kosher salt
- 4 oz (96 g) packet instant vanilla pudding
- 1/2 teaspoon (3 ml) kosher salt
- 2 teaspoon (10 ml) s vanilla extract
- 2 tablespoon (30 ml) s honey
- 2 cup (480 ml) s whole milk
- 1 1/2 cup (360 ml) s heavy cream
- 8 ounce (227 g) s vanilla wafers
- 1 cup (240 ml) whipped cream
- 2 tablespoon (30 ml) s honey
- 1 teaspoon (5 ml) cardamom
- 1/4 teaspoon (1 ml) salt
Instructions
- Prepare the peach topping: Cut the peaches in half and remove the pits. Slice each half into four pieces. In a medium bowl, mix the peaches with honey, lemon juice, vanilla extract, cardamom, optional orange blossom water, and salt. Stir until combined and let sit to soak up flavors.
- Prepare the pudding: In a separate bowl, combine the instant pudding mix with salt, vanilla extract, honey, and milk. Whisk until smooth, then place in the refrigerator for 5 minutes to set.
- In a large mixing bowl, whip the heavy cream using a mixer until it reaches stiff peaks.
- Gently combine the set pudding with the whipped cream by folding the two together until they are mixed.
- Assemble the dessert: In a 3-quart dish, spread half of the pudding mixture evenly, followed by a layer of half the vanilla wafers. Drizzle 3 tablespoons of the reserved peach juices over the wafers using a spoon. Use a slotted spoon to add half of the peach slices on top, leaving the juices behind. Repeat the layering process with the remaining ingredients.
- Cover and chill the assembled dessert in the refrigerator for a minimum of 2 hours, ideally 6 hours.
- Optional: Before serving, make the honey whipped cream by whipping heavy cream to stiff peaks. Blend in honey, cardamom, and salt. Add dollops of the flavored whipped cream on top of the dessert before serving.
