Ingredients

  • 1 honeynut squash
  • 2 tablespoons olive oil (30 ml)
  • Salt, to taste
  • Black pepper, to taste
  • 4 cups (960 ml) mixed salad greens (about 120 grams)
  • 1/2 cup (120 ml) crumbled feta cheese (about 75 grams)
  • 1/4 cup (60 ml) shelled pistachios, roughly chopped (about 35 grams)
  • 1/4 red onion, thinly sliced
  • 1 tablespoon honey (15 ml)
  • 1 tablespoon lemon juice (15 ml)
  • 1/2 teaspoon Dijon mustard (2.5 ml)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel the honeynut squash and cut it into small cubes.
  3. Place the squash cubes on a baking sheet.
  4. Drizzle 1 tablespoon of olive oil over the squash.
  5. Season the squash with salt and black pepper.
  6. Toss the squash to coat evenly in the oil and seasoning.
  7. Roast the squash in the oven for 20-25 minutes, until tender.
  8. Remove the squash from the oven and let it cool slightly.
  9. In a small bowl, mix the honey, lemon juice, Dijon mustard, and 1 tablespoon of olive oil.
  10. Whisk the dressing until well combined.
  11. In a large bowl, combine the mixed salad greens and red onion slices.
  12. Add the roasted squash to the salad greens.
  13. Sprinkle the crumbled feta cheese over the salad.
  14. Add the roughly chopped pistachios to the salad.
  15. Drizzle the dressing over the salad.
  16. Toss the salad gently to combine all ingredients.
  17. Taste and add more salt and pepper if needed.
  18. Serve immediately.
