- 1 cup all-purpose flour
- 3/4 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/4 cup vegetable oil or melted butter
- 1 teaspoon vanilla extract
- 1/2 cup granulated sugar (for topping)
- 1/2 cup packed light brown sugar
- 1/4 cup unsweetened cocoa powder (for topping)
- 1 1/4 cups boiling water
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch square baking pan. Set aside.
- In a medium bowl, whisk the flour, sugar, cocoa powder, baking powder, and salt until well combined.
- Add the milk, vegetable oil or melted butter, and vanilla. Stir with a spatula until the batter is smooth and thick. Transfer to the prepared pan and spread evenly.
- In a separate bowl, mix the white granulated sugar, brown sugar, and cocoa powder for the fudge sauce. Sprinkle this dry mixture evenly over the batter in the pan. Do not stir.
- Carefully and slowly pour the boiling water over the top of the batter. Do not stir.
- Bake for 35-40 minutes, until the center is almost set. The cake should look cooked on top but will be fudgy and gooey on the bottom.
- Remove from the oven and let stand for 10-15 minutes. Serve warm, scooping the fudgy sauce from the bottom over each serving. Top with a scoop of vanilla ice cream if desired.
Notes
Allowing the cake to rest ensures the sauce settles nicely. For variations, consider adding nuts or chocolate chips.
