Ingredients

Scale
  • 2 pounds ground venison
  • 2 tablespoons olive oil
  • 1 chopped onion
  • 23 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried herbs (thyme, rosemary, or sage)
  • 1/2 teaspoon black pepper
  • 3/4 teaspoon sea salt
  • Optional: 1 undrained can of green chilis
  • Optional: Chili powder and chili seasoning
  • Optional: Shredded cheese for topping

Instructions

  • Bring ground venison to room temperature (15 minutes)
  • Heat a large skillet over medium-high heat and add olive oil
  • Add chopped onion and sauté until translucent (3-4 minutes)
  • Add minced garlic and cook until fragrant (30 seconds)
  • Add ground venison, breaking into small pieces with a spatula
  • Cook for 5-6 minutes, stirring occasionally, until browned but slightly pink in center
  • Add Worcestershire sauce and remaining seasonings
  • If making chili or tacos, add appropriate seasonings now
  • Cook for 1-2 additional minutes until flavors meld
  • Remove from heat and let rest for 3-5 minutes before serving

Notes

Ground venison is an excellent lean protein source that requires added fat for moisture. Avoid overcooking to prevent dryness. Works beautifully in any recipe that calls for ground beef, with a richer, more distinctive flavor profile.
