  • 23 Tbsp. good quality butter (grass-fed preferred)
  • 1 Tbsp. olive oil
  • 12 tsp. sea salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry each potato thoroughly.
  3. Slice the potatoes in half lengthwise and score them with shallow slits.
  4. Apply about 1/2 tablespoon of butter on the cut side of each potato and sprinkle generously with sea salt.
  5. Drizzle olive oil on a baking sheet and spread it evenly.
  6. Position the potatoes cut-side down on the baking sheet.
  7. Roast in the oven for 30-40 minutes until golden brown and crispy.
  8. Serve hot, garnished with fresh herbs if desired.
