- 4–5 medium/large russet or gold potatoes
- 2–3 Tbsp. good quality butter (grass-fed preferred)
- 1 Tbsp. olive oil
- 1–2 tsp. sea salt
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and dry each potato thoroughly.
- Slice the potatoes in half lengthwise and score them with shallow slits.
- Apply about 1/2 tablespoon of butter on the cut side of each potato and sprinkle generously with sea salt.
- Drizzle olive oil on a baking sheet and spread it evenly.
- Position the potatoes cut-side down on the baking sheet.
- Roast in the oven for 30-40 minutes until golden brown and crispy.
- Serve hot, garnished with fresh herbs if desired.
