- 2 pounds beef chuck, cut into 1-inch cubes
- 4 medium potatoes, diced
- 3 carrots, sliced
- 1 onion, chopped
- 4 cloves of garlic, minced
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 2 tablespoons tomato paste
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 2 tablespoons olive oil
Instructions
- Set the Instant Pot to ‘Sauté’ and add olive oil. Once hot, brown the beef cubes on all sides and then set aside.
- Add chopped onions and minced garlic to the pot and sauté until translucent, about 3-4 minutes.
- Add diced potatoes, sliced carrots, and browned beef back to the pot and stir to combine.
- Pour in beef broth and add Worcestershire sauce, tomato paste, salt, black pepper, dried thyme, and paprika. Stir to mix well.
- Close the lid and set to ‘Manual’ high pressure for 35 minutes. Allow for a natural pressure release once done.
- Open the lid carefully, stir the stew, and serve hot.
Notes
Cut vegetables uniformly for even cooking. Experiment with seasonings for a twist.
