Description

A comforting and hearty Instant Pot beef stew that brings warmth and nostalgia to the dinner table with rich flavors and tender vegetables.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 medium potatoes, diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 2 tablespoons olive oil

Instructions

  1. Set the Instant Pot to ‘Sauté’ and add olive oil. Once hot, brown the beef cubes on all sides and then set aside.
  2. Add chopped onions and minced garlic to the pot and sauté until translucent, about 3-4 minutes.
  3. Add diced potatoes, sliced carrots, and browned beef back to the pot and stir to combine.
  4. Pour in beef broth and add Worcestershire sauce, tomato paste, salt, black pepper, dried thyme, and paprika. Stir to mix well.
  5. Close the lid and set to ‘Manual’ high pressure for 35 minutes. Allow for a natural pressure release once done.
  6. Open the lid carefully, stir the stew, and serve hot.

Notes

Cut vegetables uniformly for even cooking. Experiment with seasonings for a twist.
