Ingredients

- 2 pounds beef chuck, cut into 1-inch pieces
- 1 tablespoon olive oil
- 4 carrots, chopped
- 3 potatoes, diced
- 1 onion, chopped
- 4 cups beef broth
- 2 tablespoons tomato paste
- 2 teaspoons dried thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Set the Instant Pot to ‘Sauté’ mode and heat the olive oil. Add the beef and brown on all sides, about 5-7 minutes.
- Remove the beef and set aside. Add the onions, carrots, and potatoes to the pot and sauté for a few minutes.
- Stir in the tomato paste, thyme, salt, and pepper.
- Return the beef to the pot and add the beef broth and bay leaves.
- Close the lid and set to ‘Manual’ mode for 35 minutes.
- Once done, allow for natural release for 10 minutes, then quick release.
- Remove bay leaves and serve hot.
Notes
For added flavor, consider using homemade beef broth and adjusting spices according to your taste.
