Description

A hearty and comforting beef stew made effortlessly in an Instant Pot, perfect for chilly evenings.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 4 carrots, chopped
  • 3 potatoes, diced
  • 1 onion, chopped
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 teaspoons dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode and heat the olive oil. Add the beef and brown on all sides, about 5-7 minutes.
  2. Remove the beef and set aside. Add the onions, carrots, and potatoes to the pot and sauté for a few minutes.
  3. Stir in the tomato paste, thyme, salt, and pepper.
  4. Return the beef to the pot and add the beef broth and bay leaves.
  5. Close the lid and set to ‘Manual’ mode for 35 minutes.
  6. Once done, allow for natural release for 10 minutes, then quick release.
  7. Remove bay leaves and serve hot.

Notes

For added flavor, consider using homemade beef broth and adjusting spices according to your taste.
