- 2 pounds beef stew meat
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons cornstarch (optional, for thickening)
- Mashed potatoes (for serving)
Instructions
- Turn the Instant Pot to the ‘Sauté’ setting. Add olive oil to the pot and heat.
- Add the chopped onions and minced garlic, sautéing until softened.
- Add the beef stew meat, browning it on all sides for added flavor.
- Pour in the beef broth, and mix in the Worcestershire sauce, salt, and black pepper.
- Close and seal the lid, setting the Instant Pot to ‘Manual’ mode for 35 minutes.
- Allow for natural release, or a quick release if needed.
- For thicker gravy, mix cornstarch with some water. Stir this mixture into the pot and sauté until thickened.
- Serve the beef tips over mashed potatoes, spooning gravy over the top.
Notes
For added flavor, try incorporating carrots or potatoes into the dish. Leftovers can be stored in an airtight container for up to three days.
