Ingredients

  • 4 cups broccoli (chopped very small)
  • 1 ½ cups carrots (shredded or chopped very small)
  • 1 onion (diced)
  • 4 cups broth (use 3 for a thicker soup)
  • 4 Tbsp butter (unsalted)
  • 23 garlic cloves (minced)
  • ½ tsp sea salt
  • ½ tsp cracked pepper
  • ½ tsp paprika
  • 2 cups half and half
  • 2 ½ cups shredded cheddar cheese
  • ¼ cups corn starch
  • ¼ cups water

Instructions

  1. Start by chopping all the veggies and adding them to the inner pot of your pressure cooker.
  2. Next, include the broth, butter, minced garlic, paprika, sea salt, and cracked pepper. Stir to combine these ingredients thoroughly.
  3. Seal and close your Instant Pot, ensuring the vent is set to ‘sealing.’
  4. Set the pressure cooker to pressure cook on high for one minute.
  5. Allow pressure to build and complete the cooking cycle.
  6. Perform a quick release to let out the steam once the timer sounds.
  7. Next, stir in the heavy cream and shredded cheddar cheese. The heat from the soup will help melt the cheese beautifully.
  8. In a separate bowl, whisk together the corn starch and water until smooth and lump-free.
  9. Slowly stir the corn starch slurry into the pot until fully incorporated.
  10. Switch the Instant Pot to the ‘sauté’ setting, allowing the soup to heat and stir until it thickens.
  11. Adjust the seasoning to your liking before serving immediately, with your choice of garnishes!

Notes

For a thinner soup, add an extra cup of broth during the initial setup. Avoid using pre-packaged cheese that contains stabilizers for the best melting experience.
