Description

A delightful layered cake with creamy ricotta and rich chocolate, perfect for gatherings or a comforting indulgence.


Ingredients

  • 2 (15-ounce) containers of ricotta cheese
  • 1 cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 4 large eggs (room temperature)
  • 1 (15.25-ounce) box of chocolate or devil’s food cake mix
  • 1/2 cup of canola or vegetable oil
  • 1 cup of water
  • 3 large eggs (for ricotta layer)
  • 1 (5-ounce) box of instant chocolate pudding
  • 3 cups of cold milk
  • 1 (8-ounce) container of whipped topping, thawed

Instructions

  1. Preheat the oven to 350°F and grease a 9×13 baking dish with cooking spray.
  2. In a mixing bowl, combine the ricotta cheese, sugar, and vanilla extract. Add in 3 large eggs and mix until smooth.
  3. In another bowl, prepare the cake mix according to package instructions, adding in 4 large eggs, vegetable oil, and water. Stir until well combined.
  4. Pour half of the cake batter into the greased baking dish, spreading it evenly.
  5. Dollop the ricotta mixture on top of the cake batter, spreading it evenly without mixing.
  6. Pour the remaining chocolate cake batter over the ricotta layer.
  7. Bake for 40-45 minutes or until a toothpick inserted comes out clean.
  8. While cooling, whisk the instant chocolate pudding mix with cold milk until thick and then fold in the thawed whipped topping.
  9. Spread the chocolate pudding frosting over the cooled cake.
  10. Optional: Chill in the refrigerator for at least 1 hour before serving.

Notes

Make sure all ingredients are at room temperature before starting. Chill the cake for enhanced flavors.
