- 2 (15-ounce) containers of ricotta cheese
- 1 cup of granulated sugar
- 1 teaspoon of vanilla extract
- 4 large eggs (room temperature)
- 1 (15.25-ounce) box of chocolate or devil’s food cake mix
- 1/2 cup of canola or vegetable oil
- 1 cup of water
- 3 large eggs (for ricotta layer)
- 1 (5-ounce) box of instant chocolate pudding
- 3 cups of cold milk
- 1 (8-ounce) container of whipped topping, thawed
Instructions
- Preheat the oven to 350°F and grease a 9×13 baking dish with cooking spray.
- In a mixing bowl, combine the ricotta cheese, sugar, and vanilla extract. Add in 3 large eggs and mix until smooth.
- In another bowl, prepare the cake mix according to package instructions, adding in 4 large eggs, vegetable oil, and water. Stir until well combined.
- Pour half of the cake batter into the greased baking dish, spreading it evenly.
- Dollop the ricotta mixture on top of the cake batter, spreading it evenly without mixing.
- Pour the remaining chocolate cake batter over the ricotta layer.
- Bake for 40-45 minutes or until a toothpick inserted comes out clean.
- While cooling, whisk the instant chocolate pudding mix with cold milk until thick and then fold in the thawed whipped topping.
- Spread the chocolate pudding frosting over the cooled cake.
- Optional: Chill in the refrigerator for at least 1 hour before serving.
Notes
Make sure all ingredients are at room temperature before starting. Chill the cake for enhanced flavors.
