- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 6 cups chicken or beef broth
- 1 can (14.5 oz) diced tomatoes
- 2 cups chopped kale or spinach
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1/2 cup small pasta (optional)
Instructions
- In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper.
- Mix until everything is well blended, then form the mixture into small meatballs.
- In a large pot, bring the broth to a boil.
- Carefully add the meatballs to the boiling broth. Reduce the heat to a simmer and cook for about 10 minutes.
- Add the diced tomatoes, sliced carrots, chopped celery, and optional small pasta to the pot. Simmer for another 10-15 minutes until the vegetables become tender and the meatballs are fully cooked.
- Stir in the chopped kale or spinach, cooking for an additional 2-3 minutes.
- Taste and adjust the seasoning as needed before serving.
Notes
Feel free to adjust the herbs based on your preference and mix up the vegetables for variation.
