Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 6 cups chicken or beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chopped kale or spinach
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1/2 cup small pasta (optional)

Instructions

  1. In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper.
  2. Mix until everything is well blended, then form the mixture into small meatballs.
  3. In a large pot, bring the broth to a boil.
  4. Carefully add the meatballs to the boiling broth. Reduce the heat to a simmer and cook for about 10 minutes.
  5. Add the diced tomatoes, sliced carrots, chopped celery, and optional small pasta to the pot. Simmer for another 10-15 minutes until the vegetables become tender and the meatballs are fully cooked.
  6. Stir in the chopped kale or spinach, cooking for an additional 2-3 minutes.
  7. Taste and adjust the seasoning as needed before serving.
