Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup spinach or kale
  • Juice of 1 lemon

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, sauté until translucent.
  3. Add the carrots and celery, and cook for another 5 minutes until slightly softened.
  4. Pour in the vegetable broth and diced tomatoes.
  5. Add oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Stir in the spinach or kale and lemon juice, cooking for an additional 5 minutes until the greens are wilted.
  7. Serve warm.
