Ingredients

- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup spinach or kale
- Juice of 1 lemon
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic, sauté until translucent.
- Add the carrots and celery, and cook for another 5 minutes until slightly softened.
- Pour in the vegetable broth and diced tomatoes.
- Add oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in the spinach or kale and lemon juice, cooking for an additional 5 minutes until the greens are wilted.
- Serve warm.
