- 4 cups chicken or vegetable broth

- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups spinach or kale
- Salt and pepper to taste

Instructions
- In a large pot, heat olive oil over medium heat. Add the sliced sausage and cook until browned.
- Add the diced onion and minced garlic, cooking until the onion is translucent.
- Stir in the diced tomatoes and broth, bringing the mixture to a simmer.
