  • 2 bell peppers, sliced (about 2 cups (480 ml) or 300 grams)
  • 2 cloves garlic, minced
  • 1 teaspoon (5 ml) dried oregano
  • 1 teaspoon (5 ml) dried basil
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup (60 ml) chicken broth (60 milliliters)
  • 1 tablespoon (15 ml) tomato paste (15 grams)

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the Italian chicken sausage and cook until browned, about 5-7 minutes.
  3. Remove the sausage from the skillet and set aside.
  4. Add the remaining 1 tablespoon of olive oil to the same skillet.
  5. Add the sliced onion and bell peppers to the skillet.
  6. Sauté the vegetables over medium heat until they begin to soften, about 5 minutes.
  7. Stir in the minced garlic, dried oregano, and dried basil.
  8. Season with salt and black pepper to taste.
  9. Cook for another 2 minutes, stirring occasionally.
  10. Return the sausage to the skillet, combining it with the vegetables.
  11. Pour in the chicken broth and add the tomato paste.
  12. Stir everything together and bring to a simmer.
  13. Reduce the heat to low, cover, and cook for 10-15 minutes.
  14. Check the seasoning and adjust with more salt and pepper if needed.
  15. Serve hot.
