- 2 bell peppers, sliced (about 2 cups (480 ml) or 300 grams)
- 2 cloves garlic, minced
- 1 teaspoon (5 ml) dried oregano
- 1 teaspoon (5 ml) dried basil
- Salt, to taste
- Black pepper, to taste
- 1/4 cup (60 ml) chicken broth (60 milliliters)
- 1 tablespoon (15 ml) tomato paste (15 grams)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the Italian chicken sausage and cook until browned, about 5-7 minutes.
- Remove the sausage from the skillet and set aside.
- Add the remaining 1 tablespoon of olive oil to the same skillet.
- Add the sliced onion and bell peppers to the skillet.
- Sauté the vegetables over medium heat until they begin to soften, about 5 minutes.
- Stir in the minced garlic, dried oregano, and dried basil.
- Season with salt and black pepper to taste.
- Cook for another 2 minutes, stirring occasionally.
- Return the sausage to the skillet, combining it with the vegetables.
- Pour in the chicken broth and add the tomato paste.
- Stir everything together and bring to a simmer.
- Reduce the heat to low, cover, and cook for 10-15 minutes.
- Check the seasoning and adjust with more salt and pepper if needed.
- Serve hot.
