- 2 chicken breasts (boneless, skinless)
- 1 tsp (5 ml) garlic powder
- 1 tsp (5 ml) onion powder
- 1 tsp (5 ml) paprika
- Salt, to taste
- Black pepper, to taste
- 2 tbsp olive oil (30 ml)
- 4 oz cream cheese, softened (113 g)
- 1/2 cup shredded cheddar cheese (57 g)
- 2 jalapeño peppers, seeded and finely chopped
- 4 large flour tortillas
- 1 cup fresh spinach leaves (30 g)
Instructions
- Preheat the oven to 375°F (190°C).
- Place chicken breasts on a cutting board and cover with plastic wrap.
- Use a meat mallet to pound chicken to an even thickness.
- Season both sides of the chicken with garlic powder, onion powder, paprika, salt, and black pepper.
- Heat olive oil in a large skillet over medium heat.
- Add chicken breasts to the skillet and cook for 5-6 minutes per side, or until cooked through and golden brown.
- Remove chicken from the skillet and allow it to rest for a few minutes before slicing into strips.
- In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, and chopped jalapeño peppers.
- Mix until well combined to form the jalapeño popper filling.
- Lay a flour tortilla flat on a clean surface.
- Spread a portion of the jalapeño popper filling evenly over the tortilla.
- Place a handful of fresh spinach leaves over the jalapeño popper filling.
- Add sliced chicken strips on top of the spinach.
- Roll the tortilla tightly around the filling to form a wrap.
- Repeat steps 10-14 for the remaining tortillas and filling.
- Place the wraps on a baking sheet and bake in the preheated oven for 10-12 minutes, or until the tortillas are lightly crisped.
- Remove from the oven and let cool slightly.
- Slice each wrap in half and serve warm.
