  • 2 chicken breasts (boneless, skinless)
  • 1 tsp (5 ml) garlic powder
  • 1 tsp (5 ml) onion powder
  • 1 tsp (5 ml) paprika
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp olive oil (30 ml)
  • 4 oz cream cheese, softened (113 g)
  • 1/2 cup shredded cheddar cheese (57 g)
  • 2 jalapeño peppers, seeded and finely chopped
  • 4 large flour tortillas
  • 1 cup fresh spinach leaves (30 g)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place chicken breasts on a cutting board and cover with plastic wrap.
  3. Use a meat mallet to pound chicken to an even thickness.
  4. Season both sides of the chicken with garlic powder, onion powder, paprika, salt, and black pepper.
  5. Heat olive oil in a large skillet over medium heat.
  6. Add chicken breasts to the skillet and cook for 5-6 minutes per side, or until cooked through and golden brown.
  7. Remove chicken from the skillet and allow it to rest for a few minutes before slicing into strips.
  8. In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, and chopped jalapeño peppers.
  9. Mix until well combined to form the jalapeño popper filling.
  10. Lay a flour tortilla flat on a clean surface.
  11. Spread a portion of the jalapeño popper filling evenly over the tortilla.
  12. Place a handful of fresh spinach leaves over the jalapeño popper filling.
  13. Add sliced chicken strips on top of the spinach.
  14. Roll the tortilla tightly around the filling to form a wrap.
  15. Repeat steps 10-14 for the remaining tortillas and filling.
  16. Place the wraps on a baking sheet and bake in the preheated oven for 10-12 minutes, or until the tortillas are lightly crisped.
  17. Remove from the oven and let cool slightly.
  18. Slice each wrap in half and serve warm.
