Ingredients

- 1 box of penne pasta
- 1/2 each of red, yellow, and green bell peppers, diced
- 1 tsp of minced garlic
- 4 cups of water
- 1 tbsp of salt
- 1 tbsp of olive oil
- 2 tbsp of butter
- 1 tbsp of all-purpose flour
- 2 1/2 cups of heavy whipping cream
- 1 cup of Mexican-style four cheese
- 1/2 cup of mozzarella cheese
- 2 tbsp of wet jerk seasoning (such as Walkerwood)
- 1 tsp of dry jerk seasoning
- 1 tsp of seasoning salt
- Salt and pepper, to taste
Instructions
- Bring four cups of water to a rolling boil in a large pot. Add 1 tablespoon of salt and 1 tablespoon of olive oil. Once boiling, add the penne pasta and cook according to the package instructions. Drain the pasta and set aside.
- In a medium pan, heat olive oil, then add minced garlic and diced bell peppers. Sauté until softened to your liking. Set aside.
- In the same pot used for boiling pasta, melt 2 tablespoons of butter over low heat. Add 1 tablespoon of all-purpose flour and stir to create a roux. Gradually pour in heavy whipping cream, whisking steadily. Cook on low to medium heat until the sauce thickens, approximately 5 minutes.
- Add the sautéed garlic and bell peppers, along with Mexican-style four cheese, mozzarella cheese, wet and dry jerk seasonings, and seasoning salt. Stir until well combined.
- Finally, add cooked pasta to the sauce, mixing everything together until the pasta is fully coated. Serve and enjoy!
Notes
Taste and adjust seasoning while cooking. Consider undercooking pasta slightly and adding grilled chicken or shrimp for extra protein.
