  • ⅓ cup granulated sugar
  • 2 teaspoons lemon juice (approximately)
  • Powdered sugar (for dusting)
  • Apricot jam (for glazing)
  • Berries (for garnish)
  • Sweetened whipped cream (for serving)

Instructions

  1. Preheat your oven to 320°F (160°C) and line a round cake pan with parchment paper.
  2. In a mixing bowl, combine cream cheese, heavy cream, and butter. Beat until smooth and creamy.
  3. Add egg yolks, granulated sugar, lemon juice, and lemon zest to the mixture and mix well.
  4. Gently sift in cake flour and fold until just combined.
  5. In a separate bowl, whip egg whites until frothy, then gradually add sugar, beating until firm peaks form.
  6. Fold the meringue into the cream cheese batter in three additions.
  7. Pour the batter into the prepared cake pan and tap gently on the counter.
  8. Place the cake pan in a larger baking dish and add hot water to create a water bath.
  9. Bake for 60-70 minutes or until golden and puffy. Turn off the oven and leave the cheesecake inside for an additional 15 minutes.
  10. Cool to room temperature, then refrigerate for at least four hours or overnight.
  11. Dust with powdered sugar, glaze lightly with warmed apricot jam, and serve with fresh berries and whipped cream.
