Instructions
- Preheat your oven to 320°F (160°C) and line a round cake pan with parchment paper.
- In a mixing bowl, combine cream cheese, heavy cream, and butter. Beat until smooth and creamy.
- Add egg yolks, granulated sugar, lemon juice, and lemon zest to the mixture and mix well.
- Gently sift in cake flour and fold until just combined.
- In a separate bowl, whip egg whites until frothy, then gradually add sugar, beating until firm peaks form.
- Fold the meringue into the cream cheese batter in three additions.
- Pour the batter into the prepared cake pan and tap gently on the counter.
- Place the cake pan in a larger baking dish and add hot water to create a water bath.
- Bake for 60-70 minutes or until golden and puffy. Turn off the oven and leave the cheesecake inside for an additional 15 minutes.
- Cool to room temperature, then refrigerate for at least four hours or overnight.
- Dust with powdered sugar, glaze lightly with warmed apricot jam, and serve with fresh berries and whipped cream.
