A creamy and flavorful Caesar dressing that elevates salads with its rich and zesty profile.


Ingredients

  • 1½ cups mayonnaise
  • 1 tbsp yellow mustard
  • 1 tbsp anchovy paste
  • 1 tbsp + 1/4 tsp Worcestershire sauce
  • 4 garlic cloves (minced)
  • 1/2 lemon (juiced)
  • 1 tsp lemon zest
  • 1¼ cup parmigiano-reggiano (finely grated)
  • 1/4 tsp black pepper

Instructions

  1. Grate the parmigiano-reggiano and set aside.
  2. Zest and juice the lemon.
  3. In a medium bowl, combine mayonnaise, yellow mustard, anchovy paste, Worcestershire sauce, minced garlic, lemon juice, lemon zest, and black pepper.
  4. Whisk all ingredients together for about 1-2 minutes until smooth.
  5. Taste and adjust seasoning as desired.
  6. Pour the dressing over chopped romaine lettuce and croutons, and toss well to coat.
  7. Serve immediately and enjoy!

Notes

For added tang, incorporate more lemon juice. Experiment with mustard levels to find the perfect balance.
