  • 1 teaspoon (5 g) grated ginger
  • 1/4 teaspoon (1 g) black pepper
  • 2 cups (400 g) cooked white rice
  • 1 cup (150 g) shredded carrots
  • 1 cup (100 g) sliced cucumbers
  • 1/2 cup (50 g) sliced green onions
  • 2 tablespoons (30 g) sesame seeds
  • For the Creamy Gochujang Sauce:
  • 1/4 cup (60 g) Korean chili paste
  • 2 tablespoons (30 g) mayonnaise
  • 1 tablespoon (15 ml) lime juice
  • 1 tablespoon (15 ml) honey
  • 2 tablespoons (30 ml) water

Instructions

  1. In a bowl, mix soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, and black pepper.
  2. Add the thinly sliced beef to the marinade, ensuring it’s well-coated.
  3. Cover and refrigerate the beef for at least 30 minutes to marinate.
  4. While the beef marinates, prepare the gochujang sauce.
  5. In a small bowl, combine gochujang, mayonnaise, lime juice, honey, and water, mixing until smooth.
  6. Set the sauce aside.
  7. Heat a large skillet over medium-high heat.
  8. Add the marinated beef to the skillet in a single layer.
  9. Cook the beef for about 3-4 minutes on each side until browned and cooked through.
  10. Remove the beef from the skillet and set aside.
  11. Divide the cooked white rice among serving bowls.
  12. Top each bowl with cooked beef, shredded carrots, sliced cucumbers, and green onions.
  13. Drizzle the creamy gochujang sauce over each bowl.
  14. Sprinkle with sesame seeds before serving.

Notes

  • For a healthier option, consider using lean beef cuts like sirloin to reduce fat content.
  • Enhance the flavor of the creamy gochujang sauce with a splash of rice vinegar or a dash of soy sauce.
