- 1 lb beef (chuck or brisket), cut into chunks
- 4 cups beef broth
- 2 cups egg noodles
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 cup carrots, sliced
- 1 cup bell peppers, sliced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon ginger, minced

Instructions
- Combine beef, beef broth, soy sauce, sesame oil, garlic, ginger, and vegetables in a slow cooker. Season with salt and pepper.
- Cover and cook on low for 360-480 minutes or until the beef is tender.
- Cook egg noodles in a separate pot according to package instructions.
- Drain noodles and add them to the slow cooker.
- Stir to combine and allow to cook for an additional 10 minutes.
- Serve hot, garnished with green onions.
