A traditional Indian ice cream with a rich, creamy texture and flavors of cardamom, saffron, and pistachios.
Ingredients

- 2 cups heavy cream
- 1 cup sweetened condensed milk
- 1/2 cup milk
- 1/4 cup pistachios, chopped
- 1/4 teaspoon ground cardamom
- A pinch of saffron strands
- 1 tablespoon rose water (optional)
Instructions
- In a large mixing bowl, whisk together the heavy cream, sweetened condensed milk, and milk until well combined.
- Stir in the chopped pistachios, ground cardamom, saffron strands, and rose water if using.
- Pour the mixture into a container or ice cream molds.
- Cover and freeze for at least 6 hours or until solid.
- To serve, scoop the kulfi into bowls or remove from molds to enjoy as pops.
Notes
Let the kulfi sit at room temperature for a few minutes before serving for easier scooping. Experiment with different nuts or fruit purees for unique flavors.
