Description

A traditional Indian ice cream with a rich, creamy texture and flavors of cardamom, saffron, and pistachios.


Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup sweetened condensed milk
  • 1/2 cup milk
  • 1/4 cup pistachios, chopped
  • 1/4 teaspoon ground cardamom
  • A pinch of saffron strands
  • 1 tablespoon rose water (optional)

Instructions

  1. In a large mixing bowl, whisk together the heavy cream, sweetened condensed milk, and milk until well combined.
  2. Stir in the chopped pistachios, ground cardamom, saffron strands, and rose water if using.
  3. Pour the mixture into a container or ice cream molds.
  4. Cover and freeze for at least 6 hours or until solid.
  5. To serve, scoop the kulfi into bowls or remove from molds to enjoy as pops.

Notes

Let the kulfi sit at room temperature for a few minutes before serving for easier scooping. Experiment with different nuts or fruit purees for unique flavors.
