Ingredients

  • – 1 cup (240 ml) tomato sauce, divided
  • – 1 1/2 cups (360 ml) frozen corn kernels, thawed
  • – 1 1/2 cups (360 ml) bell pepper, red, yellow or green, diced
  • – 15 ounces (425 g) canned chickpeas, 1 can, drained and rinsed
  • – 3 cups (360 g) shredded mozzarella cheese, divided
  • – 16 ounces (454 g) frozen potato rounds
  • – 1/3 cup (80 ml) salsa
  • – toppings as desired, see notes

Instructions

  1. Start by setting your oven to 400°F (200°C) to heat up.
  2. Cook the ground beef, onion, and garlic on medium-high heat until the meat is fully browned, with no pink spots left. Remove any excess grease.
  3. Mix in the taco seasoning, ½ cup water, half of the tomato sauce, corn, bell peppers, and chickpeas. Let the mixture thicken, which should take around 5 minutes.
  4. Place the beef mixture into a 9×13-inch baking dish. Evenly distribute 1 ½ cups of the shredded mozzarella cheese over the top, then layer with the frozen potato rounds.
  5. Cook in the oven for 30 minutes. Meanwhile, blend the salsa with the remaining tomato sauce. Pour this mixture over the potato rounds and sprinkle the rest of the cheese on top.
  6. Continue baking for another 10 minutes or until the cheese is fully melted and bubbling.
  7. Serve with your choice of toppings.
