Ingredients
- – 4 oz (113 g) white mushrooms
- – 1 medium zucchini
- – 1 tablespoon (15 ml) vegetable oil
- – 2 garlic cloves, pressed
- – 2 eggs, lightly beaten
- – 3 cups (600 g) leftover cold jasmine rice
- – ½ lb (225 g) leftover beef steak, thinly sliced
- – 1 cup (113 g) frozen peas
- – 2 tablespoons (30 ml) soy sauce
- – 2-3 teaspoons (10-15 ml) sesame oil
Instructions
- Slice the mushrooms and zucchini into similar-sized pieces.
- Warm a large frying pan over medium-high heat and pour in the vegetable oil.
- Once the oil begins to shimmer, add the pressed garlic and sauté until aromatic, approximately one minute.
- Introduce the mushrooms and zucchini into the pan. Cook them for 3-5 minutes, stirring often, until they are browned and tender.
- Move the vegetables to one side of the pan, pour in the beaten eggs, and scramble until just firm. Combine with the vegetables.
- Incorporate the cold jasmine rice, stirring frequently, and allow it to cook for 2-3 minutes.
- Add the thinly sliced steak and frozen peas to the pan. Pour in the soy sauce and sesame oil. Mix everything together and continue cooking until all ingredients are thoroughly heated. Serve right away.
