- Zest of 1 lemon

- 1 cup powdered sugar (for glaze)
- 2 tablespoons fresh lemon juice (for glaze)
- Lemon zest (for garnish, optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish.
- Combine sugar and melted butter in a mixing bowl. Mix until well combined.
- Add the eggs, lemon juice, and lemon zest, then mix until smooth.
- Whisk together flour, baking powder, and salt in a separate bowl. Gradually add the flour mixture to the wet ingredients, mixing until just incorporated.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool completely.
- Mix powdered sugar and lemon juice until smooth for the glaze. Pour over cooled brownies and let set.
- Garnish with additional lemon zest before cutting into squares if desired.
Notes
Use a microplane for zesting lemons to avoid bitter pith. Adjust powdered sugar in the glaze for desired sweetness.
