- 1 box lemon cake mix
- 8 oz cream cheese, softened
- 1 cup lemon curd
- 1 cup water
- 1/2 cup melted butter
- 1 cup powdered sugar
- 1/2 cup mini marshmallows (optional)
- Lemon zest for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a mixing bowl, blend the softened cream cheese with the powdered sugar until smooth.
- Spread the cream cheese mixture evenly over the bottom of the prepared baking dish.
- Pour the lemon curd over the cream cheese layer.
- In another bowl, combine the cake mix, melted butter, and water until just mixed. Pour this mixture over the lemon curd layer.
- Sprinkle mini marshmallows on top if using.
- Bake for 30-35 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Let it cool slightly before serving. Enjoy chilled or warm, garnished with lemon zest if desired.
