Description

Ingredients

  • 1 cup orzo pasta
  • 2 cups water
  • 1/4 cup lemon juice
  • 1/4 cup fresh dill, chopped
  • 1 cup cucumbers, diced
  • 1 cup Feta cheese, crumbled
  • Salt and pepper to taste
  • Olive oil (optional)

Instructions

  1. Cook the orzo pasta according to package instructions in salted boiling water. Drain and let cool.
  2. In a large bowl, combine the cooled orzo, lemon juice, fresh dill, diced cucumbers, and crumbled Feta cheese.
  3. Season with salt and pepper to taste and drizzle with olive oil if desired.
  4. Toss everything together until well combined.
  5. Serve chilled or at room temperature.

Notes
