  • 2 lbs (900 g) salmon filet, cut into six 6 oz (170 g) portions
  • 2 lbs (900 g) asparagus, fibrous ends removed
  • Salt and black pepper, added to taste
  • 1 Tbsp (15 ml) olive oil
  • 1 small lemon, sliced into rings for garnish
  • 6 Tbsp (85 g) unsalted butter, softened (*see quick softening note)
  • 2 Tbsp (30 ml) fresh lemon juice, from 1 small lemon
  • 2 garlic cloves, pressed or minced
  • 2 Tbsp (8 g) fresh parsley, finely chopped
  • 1 tsp (5 ml) salt, we used sea salt
  • 1/4 tsp (1.25 ml) black pepper

Instructions

  1. Preparation – Heat your oven to 450˚F, placing the rack in the upper third. Cover a large baking sheet with parchment paper, trimming it so it fits snugly without extending over the edges to prevent burning under the broiler.
  2. Position the salmon pieces in a straight line down the center of the prepared baking tray. Place the asparagus on either side of the salmon. Lightly coat the asparagus with olive oil, rolling them to ensure they are evenly covered. Season both the asparagus and salmon with salt and black pepper.
  3. Create the Flavored Butter – In a medium-sized bowl, combine all the ingredients for the flavored butter using a fork. It might take a few minutes for everything to blend smoothly, but keep at it until well mixed. Alternatively, a food processor can be used for this task. Spread approximately three-quarters of the flavored butter over the salmon, distributing it without needing to be exact. Dot the remaining butter mixture over the asparagus.
  4. Cooking – Place a lemon slice atop each salmon piece and bake in the oven at 450˚F for 10-12 minutes. Thinner pieces will need 10 minutes, while thicker ones might take up to 12 minutes. Switch the oven setting to BROIL and cook for an additional 2-3 minutes to achieve a golden finish. The salmon is done when it flakes easily and reaches an internal temperature of 145˚F, as verified by an instant-read thermometer.
