A refreshing salad that combines orzo pasta with cherry tomatoes, cucumbers, and feta cheese, dressed in a zesty lemon vinaigrette.
Ingredients

- 1 cup orzo pasta
- 2 cups water
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/2 cucumber, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Bring two cups of water to a rolling boil. Add orzo pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water.
- In a large bowl, combine the cooked orzo, cherry tomatoes, red onion, cucumber, parsley, and feta cheese.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour over the salad and gently toss to combine.
- Serve chilled or at room temperature and enjoy!
