A refreshing salad that combines orzo pasta with cherry tomatoes, cucumbers, and feta cheese, dressed in a zesty lemon vinaigrette.


Ingredients

  • 1 cup orzo pasta
  • 2 cups water
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/2 cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Bring two cups of water to a rolling boil. Add orzo pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. In a large bowl, combine the cooked orzo, cherry tomatoes, red onion, cucumber, parsley, and feta cheese.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour over the salad and gently toss to combine.
  4. Serve chilled or at room temperature and enjoy!
