Ingredients

- 1 cup orzo pasta
- 2 cups cooked chicken, diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup lemon juice
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Cook the orzo pasta according to package instructions. Drain and let it cool.
- In a large bowl, combine the cooked orzo, chicken, cherry tomatoes, cucumber, feta cheese, red onion, and parsley.
- In a separate bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
For added flavor, try roasting the cherry tomatoes to enhance their sweetness.
