Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8 inch baking pan with grease and parchment paper.
- In a bowl, mix together the all-purpose flour and powdered sugar. Cut in the softened unsalted butter until the mixture resembles coarse crumbs, then press it into the bottom of the prepared pan.
- Bake the crust for 15-20 minutes or until it turns lightly golden.
- In another bowl, whisk together the eggs, granulated sugar, fresh lemon juice, lemon zest, baking powder, and fresh raspberries until well combined.
- Pour the lemon raspberry mixture over the crust.
- Return the dish to the oven to bake for an additional 25-30 minutes until the filling sets.
- Once done, allow the bars to cool before slicing. Dust with powdered sugar if desired.
