  • 1/4 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8 inch baking pan with grease and parchment paper.
  2. In a bowl, mix together the all-purpose flour and powdered sugar. Cut in the softened unsalted butter until the mixture resembles coarse crumbs, then press it into the bottom of the prepared pan.
  3. Bake the crust for 15-20 minutes or until it turns lightly golden.
  4. In another bowl, whisk together the eggs, granulated sugar, fresh lemon juice, lemon zest, baking powder, and fresh raspberries until well combined.
  5. Pour the lemon raspberry mixture over the crust.
  6. Return the dish to the oven to bake for an additional 25-30 minutes until the filling sets.
  7. Once done, allow the bars to cool before slicing. Dust with powdered sugar if desired.
