Ingredients

  • 1 medium yellow onion (chopped)
  • 2 medium carrots (chopped)
  • 2 celery stalks (chopped)
  • 2 garlic cloves (minced)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 cup dry green or brown lentils (rinsed)
  • 6 cups water or vegetable broth
  • 1 teaspoon salt (add to taste at the end)
  • 1 bay leaf (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, carrots, and celery. Cook for about 5 minutes until the vegetables soften.
  3. Stir in the minced garlic, dried thyme, and black pepper, cooking for another minute until fragrant.
  4. Include the rinsed lentils, water or broth, and bay leaf if using. Stir to combine.
  5. Bring the mixture to a boil over high heat.
  6. Once boiling, reduce the heat to low and cover the pot. Simmer for 25 to 30 minutes until the lentils become tender.
  7. Remove the bay leaf and stir in salt, adjusting to taste.
  8. For a thicker soup, mash a portion with a spoon or briefly use an immersion blender.
  9. Serve hot, garnishing with optional toppings like parsley, cheese, or alongside crusty bread.
