- 1 pound ground beef (85% lean)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 packet (1.25 oz) taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups tortilla chips, slightly crushed
- 2 cups shredded Mexican cheese blend
- 1 cup sour cream
- 1/4 cup fresh cilantro, chopped
- 1 jalapeรฑo, sliced
- 1 avocado, diced
- 2 green onions, thinly sliced
Instructions
- Preheat oven to 375ยฐF (190ยฐC) and grease a 9ร13 inch baking dish.
- Brown ground beef in a large skillet over medium-high heat until no pink remains.
- Add onion and cook until translucent, then add garlic and taco seasoning.
- Stir in black beans, corn, and diced tomatoes with chilies. Simmer for 5 minutes.
- Layer half the meat mixture in the baking dish, top with crushed tortilla chips and 1 cup cheese.
- Add remaining meat mixture, dollop with sour cream, and top with remaining cheese.
- Bake uncovered for 20-25 minutes until cheese is melted and bubbly.
- Let stand 5 minutes, then garnish with cilantro, jalapeรฑos, avocado, and green onions.
Notes
- Ground turkey or chicken can substitute for beef.
- Make ahead and refrigerate for up to 24 hours before baking.
