  • 1 cup black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • Fresh cilantro for garnish
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the diced potatoes in olive oil and season with salt and pepper.
  3. Spread the potatoes out on a baking sheet in a single layer.
  4. Roast the potatoes for about 25-30 minutes until golden brown.
