Description

A creamy and indulgent twist on traditional Basque cheesecake made in a loaf pan, featuring a rich, caramelized crust.


Ingredients

  • 8 oz (225g) cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • ½ cup heavy cream
  • ½ tsp vanilla extract
  • 1 tbsp all-purpose flour (or cornstarch for a gluten-free version)
  • ¼ tsp salt

Instructions

  1. Preheat your oven to 400°F (200°C) and line a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, beat the cream cheese and sugar until smooth, about 2 minutes.
  3. Add the eggs one at a time, mixing thoroughly after each addition.
  4. Blend in the heavy cream, vanilla extract, flour (or cornstarch), and salt until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 45-50 minutes until the top is deep golden brown and slightly cracked.
  7. Allow to cool in the pan for 1 hour, then refrigerate for at least 2 hours or overnight before slicing.

Notes

For a smoother batter, microwave the cream cheese for 10-15 seconds before mixing. For gluten-free, substitute all-purpose flour with cornstarch.
