Ingredients

- 1 small head of cabbage, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 3 stalks celery, sliced
- 1 can of diced tomatoes
- 6 cups vegetable broth
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Sauté the onion and garlic in a large pot until translucent.
- Add the carrots and celery and cook for a few minutes.
- Stir in the cabbage and cook until slightly wilted.
- Add the diced tomatoes, vegetable broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 30 minutes or until vegetables are tender.
- Serve hot.
Notes
For a thicker soup, blend a portion and return it to the pot. Use fresh, in-season vegetables for the best flavor.
