Ingredients

  • 1 small head of cabbage, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 3 stalks celery, sliced
  • 1 can of diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Sauté the onion and garlic in a large pot until translucent.
  2. Add the carrots and celery and cook for a few minutes.
  3. Stir in the cabbage and cook until slightly wilted.
  4. Add the diced tomatoes, vegetable broth, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for about 30 minutes or until vegetables are tender.
  6. Serve hot.

Notes

For a thicker soup, blend a portion and return it to the pot. Use fresh, in-season vegetables for the best flavor.
