Ingredients

  • 1 head of cabbage, chopped
  • 1 large onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 bell pepper, chopped
  • 4 garlic cloves, minced
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion, garlic, carrots, and celery until softened.
  2. Add the chopped cabbage and bell pepper, and cook for a few more minutes.
  3. Pour in the vegetable broth and add the diced tomatoes.
  4. Stir in the thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for about 30-40 minutes until the vegetables are tender.
  6. Adjust seasoning as needed, and serve warm.

Notes

For a creamier texture, blend a portion of the soup using an immersion blender. Store leftovers in an airtight container in the fridge for up to a week.
