- 1 lb ground venison
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, chopped
- 1 can diced tomatoes (14.5 oz)
- 4 cups low-sodium beef broth
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 2 cups fresh spinach
Instructions
- In a large pot, cook ground venison over medium heat until browned. Drain excess fat if needed.
- Add chopped onion and garlic, and sauté until softened.
- Stir in carrots, celery, and bell pepper; cook for about 5 minutes.
- Add diced tomatoes, beef broth, oregano, basil, salt, and pepper. Bring to a boil.
- Reduce heat and let simmer for 25-30 minutes until vegetables are tender.
- Stir in fresh spinach just before serving. Enjoy!
