- ½ cup unsalted butter
- 1 cup all-purpose flour
- 1½ cups granulated sugar, divided
- 1 tablespoon baking powder
- ¼ teaspoon salt
- 1 cup milk
- ¼ cup lemon juice
- Zest of 1 lemon
- 2 cups hot water
Instructions
- Preheat your oven to 350°F (175°C).
- In a 9×9-inch baking dish, melt the butter by placing it in the oven while it preheats. Once melted, remove it from the oven and set aside.
- In a mixing bowl, combine the flour, 1 cup of granulated sugar, baking powder, and salt. Stir well.
- Add the milk, lemon juice, and lemon zest to the dry ingredients. Mix until smooth.
- Pour the batter over the melted butter in the baking dish, but do not stir.
- Sprinkle the remaining ½ cup of granulated sugar evenly over the top of the batter.
- Carefully pour the hot water over the batter (again, do not stir).
- Bake for 40-45 minutes or until the top is golden brown and the cobbler has set.
- Allow the cobbler to cool slightly before serving. Serve warm with whipped cream or vanilla ice cream.
Notes
For an enhanced lemon flavor, zest the lemon right before use. Consider garnishing with fresh lemon slices or powdered sugar.
