  • 1 cup quinoa or brown rice (cooked leafy greens optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the sweet potatoes by peeling and chopping them into cubes.
  3. Toss the sweet potato cubes with olive oil and garlic powder until evenly coated.
  4. Arrange the sweet potatoes on one side of a baking sheet lined with parchment paper.
  5. Season the chicken breasts with salt and pepper, placing them on the other side of the sheet.
  6. Whisk together maple syrup and Dijon mustard until smooth in a small bowl.
  7. Brush the maple Dijon mixture over the chicken breasts.
  8. Roast in the preheated oven for about 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the sweet potatoes are tender.
  9. Serve over cooked quinoa or brown rice, and garnish with fresh herbs.

Notes
