Instructions
- Preheat your oven to 425°F (220°C).
- Prepare the sweet potatoes by peeling and chopping them into cubes.
- Toss the sweet potato cubes with olive oil and garlic powder until evenly coated.
- Arrange the sweet potatoes on one side of a baking sheet lined with parchment paper.
- Season the chicken breasts with salt and pepper, placing them on the other side of the sheet.
- Whisk together maple syrup and Dijon mustard until smooth in a small bowl.
- Brush the maple Dijon mixture over the chicken breasts.
- Roast in the preheated oven for about 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the sweet potatoes are tender.
