Ingredients

  • Beef fillets, 4 pieces (about 170 g each)
  • Salt, 1 teaspoon (5 ml)
  • Black pepper, 1/2 teaspoon (3 ml)
  • Maple syrup, 1/4 cup (60 ml)
  • Soy sauce, 2 tablespoons (30 ml)
  • Garlic, 4 cloves, minced
  • Vegetable oil, 2 tablespoons (30 ml)
  • Green beans, 1 pound (450 g)
  • Almonds, sliced, 1/4 cup (30 g)
  • Lemon, 1, juiced
  • Water, 1/4 cup (60 ml)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the salmon fillets with salt and black pepper.
  3. In a small bowl, mix together maple syrup and soy sauce.
  4. Place salmon fillets on a baking sheet lined with parchment paper.
  5. Brush the maple-soy mixture over the salmon fillets.
  6. Bake the salmon in the preheated oven for 12-15 minutes or until cooked through.
  7. While the salmon is baking, heat 1 tablespoon of olive oil in a large skillet over medium heat.
  8. Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  9. Add green beans to the skillet and stir to coat with garlic and oil.
  10. Pour water into the skillet, cover, and steam green beans for 4-5 minutes until tender.
  11. Remove the lid and cook for another 2 minutes to evaporate excess liquid.
  12. Stir in lemon juice and season the green beans with salt and pepper to taste.
  13. Meanwhile, toast sliced almonds in a dry skillet over medium heat until golden brown, stirring frequently.
  14. Remove the almonds from the skillet and set aside.
  15. Once the salmon is done, remove it from the oven and let rest for a few minutes.
  16. Serve the salmon with garlic green beans on the side.
  17. Top the green beans with toasted almonds before serving.
