  • 1 medium butternut squash (about 900 g)
  • 3 tablespoons olive oil (45 ml)
  • 1 teaspoon salt (5 g)
  • 1/2 teaspoon black pepper (2.5 g)
  • 2 tablespoons pure maple syrup (30 ml)
  • 2 tablespoons date syrup (30 ml)
  • 1 teaspoon ground cinnamon (2 g)
  • 1/4 teaspoon ground nutmeg (0.5 g)
  • 2 tablespoons (30 ml) chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel the butternut squash and cut it in half lengthwise.
  3. Scoop out the seeds and discard them.
  4. Cut the squash into 1-inch cubes.
  5. Place the squash cubes in a large mixing bowl.
  6. Drizzle the olive oil over the squash.
  7. Add the salt and black pepper to the bowl.
  8. Toss the squash cubes to evenly coat with oil and seasoning.
  9. Spread the squash cubes in a single layer on a baking sheet.
  10. Roast in the preheated oven for 25-30 minutes, or until tender.
  11. In a small saucepan, combine the maple syrup, honey, cinnamon, and nutmeg.
  12. Heat the saucepan over low heat, stirring occasionally, until the mixture is warm and well combined.
  13. Remove the squash from the oven once cooked.
  14. Transfer the roasted squash to a serving dish.
  15. Drizzle the warm maple-honey mixture over the squash.
  16. Gently toss to coat the squash with the drizzle.
  17. Garnish with chopped fresh parsley, if desired.
  18. Serve warm.
