  • 2 grams black pepper
  • 2 grams smoked paprika
  • 1 gram cayenne pepper, optional

Instructions

  1. In a large bowl, combine maple syrup, soy sauce, liquid smoke, and Worcestershire sauce.
  2. Add onion powder, garlic powder, black pepper, smoked paprika, and cayenne pepper to the liquid mixture.
  3. Stir the mixture until all ingredients are well blended.
  4. Place the venison slices in the bowl, ensuring they are fully submerged in the marinade.
  5. Cover the bowl with plastic wrap or a lid and refrigerate for at least 6 hours, preferably overnight.
  6. Preheat the oven to 175°F (80°C) or set a dehydrator to 160°F (70°C).
  7. Remove the venison slices from the marinade and pat them dry with paper towels.
  8. Arrange the slices in a single layer on baking racks or dehydrator trays, ensuring they do not overlap.
  9. Place the racks in the oven or dehydrator.
  10. Dry the venison for 4-6 hours, checking periodically for desired texture and dryness.
  11. Remove the jerky once it is firm, dry, and slightly pliable.
  12. Let the jerky cool completely before storing it in an airtight container.
