- 1/4 teaspoon (1 ml) black pepper (1.25 grams)
- 1/2 cup (120 ml) dried cranberries (60 grams)
- 1/2 cup (120 ml) crumbled goat cheese (about 75 grams)
- 2 tablespoons (30 ml) chopped fresh parsley (about 8 grams)
Instructions
- Preheat the oven to 400°F (200°C).
- Place the diced butternut squash in a large mixing bowl.
- Add olive oil, maple syrup, ground cinnamon, salt, and black pepper to the bowl.
- Toss the butternut squash until evenly coated with the mixture.
- Spread the butternut squash evenly on a baking sheet.
- Roast in the preheated oven for 25-30 minutes until tender and slightly caramelized.
- Remove the baking sheet from the oven and let the squash cool slightly.
- Transfer the roasted squash to a serving platter.
- Sprinkle dried cranberries and crumbled feta cheese over the squash.
- Garnish with chopped fresh parsley before serving.
