  • 1/2 cup (120 ml) dried cranberries (60 grams)
  • 1/2 cup (120 ml) crumbled goat cheese (about 75 grams)
  • 2 tablespoons (30 ml) chopped fresh parsley (about 8 grams)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the diced butternut squash in a large mixing bowl.
  3. Add olive oil, maple syrup, ground cinnamon, salt, and black pepper to the bowl.
  4. Toss the butternut squash until evenly coated with the mixture.
  5. Spread the butternut squash evenly on a baking sheet.
  6. Roast in the preheated oven for 25-30 minutes until tender and slightly caramelized.
