- 1 teaspoon (5 ml) garlic powder (5 grams)
- 1 teaspoon (5 ml) onion powder (5 grams)
- 1/2 teaspoon (3 ml) black pepper (2.5 grams)
- 1/2 teaspoon (3 ml) salt (2.5 grams)
- Fresh rosemary sprigs (optional for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix together the maple syrup, olive oil, Dijon mustard, garlic powder, onion powder, black pepper, and salt.
- Pat the venison tenderloin dry with paper towels.
- Brush the maple syrup mixture evenly over the entire surface of the tenderloin.
- Wrap the tenderloin with turkey bacon slices, securing the ends with toothpicks if needed.
- Place the wrapped tenderloin on a baking sheet lined with parchment paper.
- Brush any remaining maple syrup mixture over the bacon-wrapped tenderloin.
- Roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
- Remove from the oven and let rest for 5 minutes before slicing.
