- 2 pounds fresh ground beef
- 1 cup breadcrumbs
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs, beaten
- ¼ cup ketchup
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper to taste
- 2 cups fresh mushrooms, sliced
- 4 tablespoons unsalted butter
- 4 tablespoons all-purpose flour
- 2 cups beef broth
- ½ cup heavy cream
- Additional salt and freshly ground black pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine ground beef, breadcrumbs, chopped onion, minced garlic, beaten eggs, ketchup, Worcestershire sauce, thyme, oregano, and a generous pinch of salt and pepper.
- Mix the ingredients with your hands until just combined, then shape the mixture into a loaf and place it in a greased casserole dish.
- Bake for 50-60 minutes, or until a meat thermometer reads 160°F (71°C).
- While the meatloaf is baking, melt the butter in a skillet over medium heat.
- Add the sliced mushrooms and sauté until golden brown, about 5-7 minutes.
- Sprinkle the mushrooms with flour, stirring constantly for 2 minutes.
- Gradually whisk in beef broth and heavy cream, stirring until the gravy thickens, about 5-7 minutes.
- Once the meatloaf is done, allow it to rest for a few minutes before slicing. Serve with the warm mushroom gravy on top.
